Pancake Recipe

Fluffy pancakes from scratch.
This recipe was adapted from a recipe on Food.com.

Ingredients
- (1 Tsp.) Salt
- (2 Cups) Flour
- (1 Tbsp.) Baking Powder
- (1 Tsp.) Sugar or Maple Syrup
- (2 Cups) Milk
- (2) Large Egg Yolks
- (1 Tbsp.) Margarine or Butter
- (2) Large Egg Whites
- (1/2 Cup) Blueberries or Chocolate Chips (Optional)
Directions
Mix together the flour, sugar (if using), salt and baking powder.
Pour in the milk and mix well.
Melt the margarine/butter and pour into the mixture. Add the maple syrup (if using instead of sugar) and the egg yolks to the mixture and mix again.
Whip the egg whites until peaks form (about 2 mins) and fold them into the batter.
Lightly coat your pan with butter/margarine and fry.
We like to add the chocolate chips or blueberries to one side of the pancake before we flip them.
